This easy crockpot breakfast recipe combines hearty oats, real pumpkin puree, and a blend of cozy fall spices.

If you are new here, you may not know that I am a huge fan of dessert for breakfast! Chocolate Chip Cookie Dough Oatmeal, Strawberry Cheesecake French Toast, and Gingerbread French Toast are a few examples. This overnight pumpkin oatmeal recipe is just another of my many attempts to normalize eating dessert all day!

To make crockpot pumpkin oatmeal, you will need the following ingredients. For quantities and full preparation instructions, please see the recipe card at the bottom of this page.

- Steel-cut oats - also sometimes known as Irish oats, are a must for this recipe. Rolled oats and quick oats will turn to mush if they are cooked overnight. Irish oatmeal overnight oats are next-level amazing!
- Pumpkin puree - canned or homemade pumpkin puree are each perfect for this recipe. Take care not to accidentally buy pumpkin pie filling (the cans often look similar).
- Chia seeds - Adding chia seeds to your oatmeal increases the nutritional profile and the creaminess of the dish. If you are not a fan of the texture, these can be omitted.
- Vanilla - pure vanilla extract is my favorite and adds great flavor. I am also a fan of vanilla bean paste, which can be used as a 1:1 swap for vanilla extract.
- Ground cinnamon, nutmeg, ginger, and cloves - or keep it extra lazy and use 1 tablespoon of pumpkin pie spice instead!
- Maple syrup - I prefer to use pure maple syrup for a richer, more authentic flavor, but any kind will work
- Almond milk - this is my personal preference, but you can use any plant-based milk or water.
Why you'll 💜 your slow cooker for this recipe
- Hands-off overnight cooking. Just pop all the ingredients in your slow cooker and go to sleep. When you wake up, you will have amazing smells and breakfast that is ready to serve!
- Larger quantities. This dish is great for feeding a larger crowd. Holiday mornings (think Thanksgiving!), sleepover parties, and brunch buffets are all great occasions for this dish.
- Meal prep. (see #2 above!) Make it once and store in easy grab-and-go containers for a whole week's worth of breakfasts.
- Steel Cut Oats without the bother. Steel-cut oats on the stove require 30-40 minutes of babysitting. Crockpot steel-cut oats need no oversight, but still have the benefit of being the least processed, most filling oats.
Preparing your slow cooker
Prepare your slow cooker by coating it with a non-stick agent. Any nonstick cooking spray or oil will work. Avocado oil and coconut oil are my go-tos for this recipe.
NOTE: Some slow cooker inserts come with a nonstick surface. Use of a non-stick agent is still suggested. However, oil is sometimes recommended rather than spray to protect the longevity of the non-stick surface. Check your slow cooker's manual if you have any concerns.
Alternatively, you can choose to use a slow cooker liner.
Get Cooking

- Add all ingredients to a VERY well-greased slow cooker

- Stir to combine

- Cook overnight

- Stir and serve!

There are tons of delicious ways to top overnight pumpkin pie oats. Here are some favs:
- More maple syrup or brown sugar to sweeten. (This dish is not uber sweet as written.)
- Raisins
- Nuts
- Granola
- Chocolate chips (because what isn't made better with chocolate chips?!?)
- A dollop (or two) of peanut butter
- Or cashew butter
- Or almond butter
- More milk (this will help loosen it up if it gets a little sticky or thick)
- A sprinkling of cinnamon or cinnamon sugar
Storing
- Refrigerate leftover pumpkin pie crockpot oatmeal in airtight containers for up to 5 days. Leftovers will thicken as they sit. Add some additional water or milk to help loosen them up. Leftovers are delicious hot or cold!
- Freeze leftovers in meal-sized containers for up to 3 months. Defrost overnight in the refrigerator before serving.

- Add a little Pumpkin Pie Spiced Oat Milk Creamer to your oats for extra yumminess! This addition will bring both creaminess and extra flavor!

- I recommend a slow cooker liner for easy clean-up. This is, of course, an optional step. I skip this if I am serving guests as it is not the prettiest serving option.
- If you want to add chocolate chips, be sure to let your oatmeal cool a bit before attempting to stir in chips. Hot oatmeal will cause chocolate chips to melt (although that's not necessarily bad!!).

- Stir to combine. Try to break up clumps of pumpkin as you stir
