Preparing your slow cooker
Preparing Your Slow Cooker
Prepare your slow cooker by coating it with a non-stick agent. Any nonstick cooking spray or oil will work. Olive oil and avocado oil are my go-to coatings.
NOTE: Some slow cooker inserts come with a nonstick surface. Use of a non-stick agent is still suggested. However, oil is sometimes recommended rather than spray to protect the longevity of the non-stick surface. Check your slow cooker's manual if you have any concerns.
Alternatively, you can choose to use a slow cooker liner to make this creamy mushroom chicken without soup.

- 🍄🟫 Place chicken pieces into a greased slow cooker
- 🍄🟫 Add all ingredients other than whipping cream, parmesan, and pasta
- 🍄🟫 Stir the ingredients. It is important to ensure all dried mushroom pieces are under the chicken and fully submerged in liquid.
- 🍄🟫 Cook on low for 4-6 hours or high for 2-3 hours.
- 🍄🟫 Once chicken is cooked through, remove and set aside
- 🍄🟫 Take a tablespoon or two of the hot liquid from your slow cooker and stir it into your heavy whipping cream. This will gradually increase the temperature of the cold cream. Tempering the cream in this way will greatly reduce the chance of curdling or separating. Alternatively, you can leave it on the counter for about 20 minutes to help bring it up to room temperature before using
- 🍄🟫 Stir the tempered cream, about ¾ of the parmesan cheese, and your pasta into the liquid in your slow cooker. Cover and allow to continue cooking.
- 🍄🟫 On a separate plate, shred the chicken. I usually use two forks for this process, but some people prefer a chicken shredder. Alternatively, If you are not a fan of shreds, cut your chicken into strips or bite-sized pieces.
- 🍄🟫 Stir chicken into the ingredients in your slow cooker🍄🟫 When the noodles are al dente, top with the remaining parmesan cheese and enjoy!!

🍗A note about slow-cooked chicken
Chicken in the slow cooker can be a bit tricky. Boneless chicken breast meat can dry out and get tough if overcooked. Skinless chicken thighs are more forgiving and flexible and won't dry out quite as fast.
Using a meat thermometer is the best way to ensure slow cooker chicken is juicy and tender every time. Toward the end of cooking time, use the thermometer to test the internal temperature of larger chicken pieces. Chicken is safe to eat once it reaches an internal temperature of 165℉.

🍽Serving suggestions
This dish is amazing with:
- Some crusty bread to wipe up the velvety sauce and creamy chicken (my family's favorite!)
- A crisp garden salad turns this dish into a complete meal
- Roasted green beans, a whole cauliflower, and vanilla maple carrots are perfect warm side dishes
- Sprinkle with red pepper flakes to spice it up.

🔁Substitutions
- Use boneless chicken thighs in place of breasts
- Dairy cream works equally well in this recipe as dairy-free; dairy-free is just our personal preference in
- To make this dish fully dairy-free, swap parmesan cheese with nutritional yeast or dairy-free parmesan cheese.
- Swap white button mushrooms with baby bella mushrooms or cremini mushrooms
- Frozen egg noodles are a great swap for traditional pasta
- If you are a fan of easy crockpot chicken recipes, Mediterranean chicken, Greek chicken, and Chicken Caprese are for you!
Bonus tip: Add sun-dried tomatoes to take this dish to the next level.
Storing leftovers
Store leftover slow-cooker creamy mushroom chicken in an airtight container or bag in the fridge for up to 3 days. Gently reheat leftovers by the plateful in the microwave. Be aware that the pasta may get a bit mushy or break apart after sitting (but still delicious). Add a bit of cream or broth to freshen up the sauce when reheating.

😉Hints & hacks
- Use a silicone or wooden spoon when mixing in your slow cooker to avoid scratching.
- Chicken is considered safe to eat when it reaches an internal temperature of 165℉. Use a meat thermometer if you want to confirm.
- This easy recipe works with breasts, thighs, or even a combination of both, depending on your preference. Keep in mind that breasts will always come out drier than thighs.
- I always recommend the use of a slow cooker liner. Of course, this is an optional step. I like to purchase my liners in bulk for a less expensive per-piece price.
- In the market for a new slow cooker? I love mine!
- Always double-check that your slow cooker is plugged in and turned on! Nothing is worse than a cold crockpot and uncooked food when you are ready to eat! 🤪
It's not recommended to use frozen chicken in a slow cooker due to food safety concerns. Always thaw chicken fully before cooking.
Yes! To make this dish gluten-free, I like to use quick cooking rice noodles.
NO - they are a bit expensive and harder to find. You can add an extra cup of regular mushrooms instead. However, dried mushrooms add a lot of umami flavor, and it won't be the same without them.
