This creamy corn dip recipe involves just a few simple steps:
Preparing Your Slow Cooker
Prepare your slow cooker by coating it with a non-stick agent. Any nonstick cooking spray or oil will work. Olive oil and avocado oil are my go-to coatings.
NOTE: some slow cooker inserts come with a nonstick surface. Use of a non-stick agent is still suggested. However, oil is sometimes recommended rather than spray to protect the longevity of the non-stick surface. Check your slow cooker's manual if you have any concerns.
Alternatively, you can choose to use a slow cooker liner. However, I find them not as nice looking when you are serving guests.
Cooking
- 🌽 Add all ingredients, other than garnishes, to a greased slow cooker
- 🌽 Stir to combine
- 🌽 Cover and cook until gooey and melted. Each slow cooker is slightly different which can change cooking time. This takes me about 2 - 2.5 hours on high heat or 4 - 5 hours on the low heat setting.
- 🌽 After cooking, stir again to fully combine.
- 🌽 Turn your slow cooker to the warm setting, top with cotija crumbles and green onion slices.

- 2 14.5 oz cans sweet cream style corn
- 1 cup mayonnaise not sweet mayo
- 16 oz whipped cream cheese
- 2 cups cheddar Jack cheese* shredded
- 2 tablespoon tajin plus more for garnish
- 2 4 oz can green chilies diced (can use mild or hot)
- 2 teaspoon garlic powder
- 1 lime juice and zest
- 1 teaspoon salt
- cotija cheese crumbles, garnish
- green onion sliced, garnish
Instructions
- To a greased slow cooker add 2 14.5 oz cans sweet cream style corn , 1 cup mayonnaise, 16 oz whipped cream cheese, 2 cups cheddar Jack cheese* , 2 tablespoon tajin, 2 4 oz can green chilies, 2 teaspoon garlic powder, 1 teaspoon salt, and the juice and zest of 1 lime
- Stir to combine
- Cook on high for 2 hours or low for 4. All cheeses should be fully melted before moving on to the next step.
