📝Shopping list
To make this delicious meal you will need:
- Browned ground beef*
- Canned corn
- Canned diced tomatoes
- Salsa
- Diced green chili - I used canned
- Taco seasoning* - premade or homemade both work
- Beef broth
- Ramen noodles - toss any seasoning packets, you be needing them!
- Shredded cheese - Mexican blend (optional, garnish)
- Sour cream - (optional, garnish)
Crockpot beef ramen noodles are a great dish that the whole family will love. Ground beef, savory sauce and tender noodles all get tossed together with minimal effort - perfect for busy weeknights.
To keep this dish a little healthier, I like a use a rice and brown millet ramen along with extra lean ground beef. In my opinion, this is the best ramen. It is sold in bulk and doesn't include those high sodium flavor packets.

This delicious crowd-pleasing dinner involves just a few simple steps:
Preparing Your Slow Cooker
Prepare your slow cooker by coating it with a non-stick agent. Any nonstick cooking spray or oil will work. Olive oil and avocado oil are my go-to coatings.
NOTE: some slow cooker inserts come with a nonstick surface. Use of a non-stick agent is still suggested. However, oil is sometimes recommended rather than spray to protect the longevity of the non-stick surface. Check the manual for your slow cooker if you have any concerns.
Alternatively, you can choose to use a slow cooker liner.
Browning Beef
Ground beef can be browned stove top in a large skillet. If you have a browning feature in your slow cooker, that works well too!
I like to bulk-brown beef in my traditional crock pot. I freeze it in recipe-sized portions so that I always have some on hand for various slow cooker recipes. This prep step makes so many great slow cooker recipes a fraction of the work come assembly time. My kind of lazy!!
Regardless of how you cook it, be sure to drain all of the fat.
Cooking
- 🍳 Add all ingredients to your greased slow cooker other than ramen and garnishes
- 🍳Stir to combine
- 🍳Cover and cook on low for 4-6 hours, or high for 2-4 hours
- 🍳About 15 minutes prior to serving, add dry ramen noodles to slow cooker
- 🍳Use a spoon to make sure the noodle cakes are fully covered by the sauce in your slow cooker
- 🍳Replace cover and allow to cook for an additional 15 minutes or so
- 🍳When noodles have softened, stir them fully into the sauce mixture. Don't over stir or the thick sauce will cause the noodles to break apart.
- 🍳Optional - top with shredded cheese and replace lid just long enough for the cheese to melt.
- 🍳Serve promptly topped with sour cream (optional)
- Step 1: Add all ingredients except noodles and toppings right into your slow cooker and stir to combine.
- Step 2: About 15 minutes before serving, bury ramen cakes in hot beef mixture in your crockpot
- Step 3:Once noodles have fully soften, stir to fully combine
- Step 4: Add shredded cheese to the top of your ramen and allow to melt for extra gooey goodness!

If you prefer to make your own, rather than use a store-bought mix, this is the recipe I use:
Homemade Taco Seasoning Mix
- 4 tablespoons chili powder
- 1.5 tablespoons cumin
- 1.5 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1 teaspoon dried cilantro
- optional (if you like it hot): 1 tablespoon red pepper flakes
Add all ingredients and stir. Store in a cool, dry, air-tight container.

- Freezing leftovers of this taco pasta bake in meal-sized portions makes for easy reheat-and-eat weeknight meals.
- Lean ground beef is always my preference for delicious slow cooker recipes like this.
- I always recommend the use of a slow cooker liner. Of course, this is an optional step. I like to purchase my liners in bulk for a less expensive per-piece price.

Slow Cooker Taco Beef Ramen
Equipment
- 4 quart or larger slow cooker
Ingredients
- 1.5 - 2 lbs browned ground beef brown beef and drain fat
- 15 oz can corn
- 15 oz can diced tomatoes
- 1 cup salsa
- 8 oz can green chilis diced
- 1 cup beef broth
- ⅓ cup taco seasoning
- 3 2½oz cakes ramen noodles
- shredded Mexican blend cheese optional - topping
- sour cream optional - topping
Instructions
- place 1.5 - 2 lbs browned ground beef in greased slow cooker
- add 15 oz can corn, 15 oz can diced tomatoes, 1 cup salsa, 8 oz can green chilis, 1 cup beef broth, and ⅓ cup taco seasoning and stir to combine
- cover and cook on low for 4-6 hours
- 15 minutes prior to serving, add 3 2½oz cakes ramen noodles to slow cooker and full immerse into beef mixture.
- cover and cook for an additional 15 minutes. Use a spoon to break apart noodle cakes and fully mix in with other ingredients.
- top with cheese and place lid back on slow cooker just until it melts.
