The baby potatoes cooked right alongside the chicken are smashed and roasted making them a perfect, crunchy side dish.

Chicken and Potatoes Prep
- non stick cooking spray
- boneless skinless chicken breasts*

- lemon - juiced, or pure lemon juice

🔪Instructions
Start by spraying your slow cooker with a nonstick cooking spray. Add chicken to the bottom of your slow cooker. Top with all remaining prep ingredients, other than baby potatoes and stir to combine.
Place baby potatoes in slow cooker on top of mixture. Do not stir.
Cover with lid and cook on the low setting for 3-4 hours. You are ready for the next step when your potatoes can be easily pierced and chicken reaches 165℉.
Chicken Salad
Once chicken has been removed from the slow cooker, shredded it and allow it to cool. Add all chicken salad ingredients to shredded chicken other than grapes. Stir to combine. If the recommended quantity of mayo doesn't yield your desired consistency, feel free to add in a little more.
Grapes should be folded into chicken salad last to ensure they don't get crushed during the mixing process. Sprinkle the top with extra crushed cashews (optional) just prior to serving.
Smashed potatoes
Remove potatoes from slow cooker and place on a parchment lined baking tray. Now comes the fun part! Smash each potato into a flat pancake. I like to use a sturdy drinking glass for this.
Once smashed, drizzle or spray olive oil over potatoes to fully coat. A basting brush or even your hands may be helpful with this process.

Sprinkle garlic salt and onion powder over oiled, smashed potatoes. Place baking sheet into the oven and cook on 425℉ until potatoes are crunchy and golden brown.
Cooking time may vary based on your oven. Keep any eye on the potatoes the first time you make them. Mine were ready to go in about 25 minutes.
Taste test crispy smashed potatoes and sprinkle additional sea salt flakes over top if needed. Enjoy!

- 2 large boneless skinless chicken breasts
- 1 cup chicken stock
- 1 lemon juiced
- 1 teaspoon garlic powder

- 1½ lbs baby potatoes
Chicken Salad
- 1 cup grapes cut in half
- ⅔ cup cashews or nuts of choice - broken in pieces
- ½ cup mayonnaise or more to taste, if too dry
- ½ teaspoon garlic salt
- 1 tablespoon fresh dill chopped (optional)
- 1 teaspoon mustard powder (optional)
- green onion finely chopped (optional)
Smashed Potatoes
- ⅓ cup olive oil or avocado oil
- ½ tsp garlic salt
- ¼ tsp onion powder

Instructions
Cooking Chicken and Potatoes
- spray slow cooker with non-stick cooking spraynon stick cooking spray
- place chicken into slow cooker2 large boneless skinless chicken breasts

- stir slightly to make sure chicken is as covered with liquid as possible
- add potatoes into slow cooker on top of chicken mixture1½ lbs baby potatoes
- cover and cook on low for 3-4 hours until potatoes are easily pierced and chicken reaches an internal temperature of 165℉
Smashed Potatoes
- remove potatoes from slow cooker and place on a parchment paper covered tray and allow to cool slightly.
- use a fork, potato masher, or small glass to smash potatoes as flat as possible.
- drizzle with olive oil and use a brush or your hands to make sure potatoes are well coated⅓ cup olive oil, ½ teaspoon garlic salt, ¼ teaspoon onion powder
- sprinkle with seasonings
- place potatoes in 425° oven for 25 - 30 min, or until potatoes are crispy and browned
- sprinkle with a touch of sea salt before serving (if needed)
Chicken Salad
- once cooked through, remove chicken from cooking liquid
- use two forks to shred chicken and allow to cool
- add chicken salad ingredients other than grapes to chicken and stir to fully combine⅔ cup cashews, ½ cup mayonnaise, ½ teaspoon garlic salt, 1 tablespoon fresh dill, 1 teaspoon mustard powder, green onion
- carefully fold in grapes so that they won't get crushed1 cup grapes
