The best news is that these fresh spring rolls are really just a dump-and-go recipe. This makes them perfect for busy weeknights. Plus, it is a healthy dish you will feel good about serving often!

To make this fun tasty recipe you will need:
- ground chicken
- hoisin sauce
- carrots - finely diced
- celery - finely diced
- onions - finely diced*
- soy sauce
- fresh ginger - grated or crushed
- minced garlic*
- sesame oil
- rice vinegar
- cabbage slaw or carrots matchsticks (for serving)
- sliced almonds (optional for serving)
- sesame seeds (optional for serving)
- rice paper wrappers
- nonstick cooking spray

🔪Instructions
Start by applying a nonstick spray or oil to your slow cooker (I am currently on an Avocado oil kick). Next place chicken with all ingredients not labeled "for serving" into your crock pot. Use a spoon or spatula to break up the chicken and stir to fully mix ingredients.
Cover and cook on low until chicken reaches an internal temperature of 165℉. This should take about 3-4 hours.
When you are ready to serve, soak each rice paper sheet in warm water according the package instruction. Do not over soak! Over soaked wrappers get mushy and sticky.
Add chicken mixture along with your choice of extras (almonds etc) to rice paper wrappers. Fold in each end and then roll up your spring roll. Serve with your dipping sauce of choice and enjoy!

🔁Substitutions
- Green onions or shallots can be used in place of yellow onion for a milder flavor
- For ease, I use jarred, minced garlic. Three fresh garlic cloves, minced or pressed, or 1 teaspoon of garlic powder can be used instead.
- Ground turkey can be used in place of chicken.
- Finely diced green or red bell peppers can also be added in to the chicken mix if you like.
Storing
Store leftovers of this delicious dish in an airtight container or bag. It will last 3-4 days in the refrigerator or several months in the freezer.

- A prepackaged coleslaw mix is a great way to add hassle-free crisp vegetables and crunch to your spring rolls.
- This is an easy dish to meal prep in advance Just add chicken, veggies, and seasonings to a zip-top bag and store in the refrigerator. Depending on how fresh your chicken is, it should last 2-3 days. When you are ready to cook, just toss it in your slow cooker and stir!
- For some additional veggies in your dish, add snow peas to the chicken mixture before cooking.
- Please note that cooking time varies based on your slow cooker. The first time you make this dish, note how long it takes for the chicken to reach 165℉. This will make it much easier the next time you make it.
- I always recommend the use of a slow cooker liner. Of course, this is an optional step. I like to purchase my liners in bulk for a less expensive per-piece price.

- 1½ lbs ground chicken
- ¾ cup hoisin sauce
- ⅓ cup carrots finely diced
- ⅓ cup celery finely diced
- ⅓ cup onions finely diced
- ⅓ cup low sodium soy sauce
- 1 teaspoon fresh ginger crushed or finely grated
- 1 tablespoon minced garlic (Jarred) 3-4 cloves if using fresh
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- cabbage slaw or carrots matchsticks (for serving)
- sliced almonds (for serving)
- sesame seeds (for serving)
- rice paper wrappers
- nonstick cooking spray
Instructions
- spray slow cooker with nonstick cooking spray
- add all ingredients other than those specified for serving1½ lbs ground chicken, ¾ cup hoisin sauce, ⅓ cup carrots, ⅓ cup celery, ⅓ cup onions, ⅓ cup low sodium soy sauce, 1 teaspoon fresh ginger, 1 tablespoon minced garlic, 1 tablespoon sesame oil, 1 tablespoon rice vinegar
- stir to fully combine
- cover and cook on low for 3-4 hours or until chicken is fully cooked through
- follow instructions on rice paper wrappers package regarding soaking in water to soften. NOTE: do not over soak as they will become mushy and sticky.
