Mac & Cheese Stuffed Meatloaf

Gooey macaroni and cheese surrounded by tender and delicious meatloaf all made in your crockpot. An easy dish that marries the wonderful flavors of these two classics in the most amazing way!

Equipment

  • 6 qt or larger slow cooker or a 3.5 quart casserole slow cooker. I do not recommend making this in a round slow cooker

Ingredients

  • 3 lbs ground beef 90% leaner or leaner
  • 4 eggs
  • 1 cup panko bread crumbs I use seasoned bread crumbs
  • 1 cup+ ketchup
  • ¼ cup dried onion flakes
  • 1 tablespoon garlic powder
  • 1 pinch each - salt and pepper
  • 2 12oz packages frozen prepared macaroni & cheese I use Stauffers
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded

Instructions

  • Place 3 lbs ground beef, 4 eggs, 1 cup panko bread crumbs, 1 cup ketchup, ¼ cup dried onion flakes, 1 tablespoon garlic powder, and 1 pinch each - salt and pepper. Mix together thoroughly. This works best using your hands!

  • Place about ⅔ of beef mixture into a greased slow cooker. Flatten mixture with hands along bottom and about 2" up the sides of slow cooker so that the slow cooker is lined with your ground beef mixture.
  • remove 2 12oz packages frozen prepared macaroni & cheesefrom containers and add into middle of the meat. If they don't fit side by side, you can cut or break them to fit

  • Use1 cup cheddar cheese and 1 cup mozzarella cheese to fill in any gaps and to cover mac and cheese blocks
  • Add remaining beef mixture on top and use hands to make sure all mac and cheese is covered in a ground beef cocoon. Pinch together edged of top layer with the ground beef coming up the side of your slow cooker. Your mac and cheese should now covered cocoon-like in ground beef.
  • drizzle top of meat mixture with ketchup
  • cover and cook on low for 7-8 hours or high for about 4 hours

Notes

If you are not a fan of ketchup, you can use BBQ sauce in it's place
I often use a mixture of ground turkey and ground beef when making this dish.
