  • 4 quart slow cooker or larger

Ingredients

  • 8 cups chicken stock or broth
  • oz fully cooked turkey sausage crumbles
  • 2 carrots large chopped
  • 1 zucchini large chopped
  • 2 cups fresh cauliflower florets
  • 1 cup chopped onions
  • 15 oz can diced tomato (with liquid) Italian blend works well
  • ½ cup white cooking wine or dry white wine
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 pieces parmesan rind optional
  • 20 oz cheese tortellini fresh or frozen, not dried
  • optional topping: grated Parmesan cheese

Instructions

  • Add 9½ oz fully cooked turkey sausage crumbles,2 carrots , 1 zucchini , 2 cups fresh cauliflower florets, 1 cup chopped onions, 15 oz can diced tomato (with liquid), ½ cup white cooking wine , 3 cloves garlic, 1 teaspoon dried oregano, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1 teaspoon salt , ½ teaspoon pepper, 8 cups chicken stock or broth2 pieces parmesan rind to a greased slow cooker
  • stir to mix
  • cover and cook on low for 6-8 hours or high for 3-4 hours
  • 15 - 30 minutes before serving, add 20 oz cheese tortellini. You will want to serve as soon as the tortellini is fully cooked through. Serve promptly.
