Slow Cooker Tomato Balsamic Chicken
Delicious tomato balsamic chicken made in your slow cooker is an easy, hands-free meal. This simple crockpot recipe is full of flavor and can be served a ton of different ways.

- 2 lbs chicken breasts chicken thighs can be used as well
- 14.5 oz can diced tomatoes with all liquid
- 6 oz can tomato paste
- ½ cup balsamic vinegar
- 1 teaspoon garlic powder
- 1 tsp onion powder
- 1 teaspoon dried basil
- ½ teaspoon dried rosemary
- ½ teaspoon dried thyme
- ½ teaspoon salt plus more to taste, if desired
- fresh chopped tomatoes, basil and shredded parmesan cheese optional garnish for serving
spray or grease slow cooker with nonstick agent of choice
place chicken breasts into bottom of slow cooker
2 lbs chicken breasts
add remaining ingredient, other than garnishes, to slow cooker
14.5 oz can diced tomatoes, 6 oz can tomato paste, ½ cup balsamic vinegar, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried basil, ½ teaspoon dried rosemary, ½ teaspoon dried thyme
cover and cook for low for 3-4 hours or until chicken reaches an internal temperature of 165℉
remove chicken from slow cooker and cut into bite-sized cubes
Taste sauce and add additional salt, if needed
return chicken chunks to slow cooker and stir to fully incorporate into sauce
top with fresh diced tomatoes, chopped basil, and shredded parmesan cheese when serving.
