Slow Cooker "Roasted" Peppers

These easy Slow Cooker Roasted Peppers are tender, sweet, and bursting with flavor—no oven required! Perfect for sandwiches, salads, and antipasto platters. They are a hands-off way to enjoy homemade roasted peppers without having to babysit your oven.

Equipment

  • Any size slow cooker
  • tongs
  • Knife and cutting board

Ingredients

  • 2-4 large bell peppers depending on the size of your slow cooker
  • 2 tablespoon olive oil

Instructions

  • Clean 2-4 large bell peppers and cut in half, discarding stems and seeds
  • Use 2 tablespoon olive oil to fully grease your slow cooker
  • Cook on high for 4-5 hours.  You will be able to tell when the peppers are ready because the skin will start to blister.  
  • Allow peppers to sit until cool.   Skin should peel off rather easily at this point

This recipe works on any color pepper and any shape pepper (not just bell peppers)
If you would rather not cut the peppers in advance, you can cook them whole.  Seeds and stems need to be remove after the peppers have cooled.  
Great to serve with olive oil and garlic or to use in a variety of recipes!
