  • 24 frozen waffles quartered
  • 2 cups milk of choice I use almond
  • 6 eggs
  • 15 oz pumpkin puree about 1¾ cups if using homemade
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger powder
  • ¼ teaspoon ground cloves

Instructions

  • Cut 24 frozen waffles quarters and set aside in a bowl or zipper top bag
  • In a separate bowl, use a whisk to beat together 2 cups milk of choice, 6 eggs, 15 oz pumpkin puree,½ cup brown sugar, 1 teaspoon ground cinnamon, 1 teaspoon vanilla extract, ½ teaspoon nutmeg, ½ teaspoon ground ginger powder, and¼ teaspoon ground cloves
  • Pour egg mixture over waffles.
  • If time allows, let the mixture sit for 2 - 10 hours. (you can skip this step if you aren't making this dish in advance)
  • Place waffle mixture into a greased slow cooker and cook on high for 2½ - 3 hours or low for 5-6 hours.
  • Serve warm with anything from maple syrup to ice cream and enjoy!
