Ingredients

Peach Layer (bottom)

  • 7-8 medium peaches, skin removed and cut in slices about 4 cups of peaches
  • ½ cup brown sugar or sugar 1:1 replacement like Swerve
  • ¼ cup sugar or sugar 1:1 replacement like Swerve
  • ¼ cup agave
  • 2 tablespoon lemon juice

Cobbler Layer (topping)

  • 1 cup flour
  • ¾ cup milk I use almond
  • ½ cup sugar or sugar 1:1 replacement like Swerve
  • ¼ cup melted butter cooled slightly
  • 1 tablespoon baking powder
  • 1 tablespoon pure vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon cinnamon

Instructions

Peach Layer

  • Add 7-8 medium peaches, skin removed and cut in slices to the bottom of a greased slow cooker
  • Top with ½ cup brown sugar, ¼ cup sugar, ¼ cup agave, and 2 tablespoon lemon juice
  • Stir to combine
  • Turn slow cooker to low and cover, allowing peaches to heat up while you work on topping

Topping

  • In a separate bowl, mix together 1 cup flour, ½ cup sugar, 1 tablespoon baking powder, ½ teaspoon salt, and ½ teaspoon cinnamon
  • Add in ¾ cup milk and 1 tablespoon pure vanilla extract and stir
  • Add slightly cooled ¼ cup melted butter and stir well to mix
  • Spoon batter mixture over fruit in slow cooker and smooth out to form a top layer. Optional step: poke a few extra peach slices into the topping
  • Cover and cook 2½-3 hours or until topping is set.
  • Serve warm with ice cream or allow to cool and serve

Notes

To help keep extra moisture away fromt he cake-like topping, place a tea towel or paper towel under the lid of your slow cooker
