Ingredients

  • 2 lbs beef stew meat
  • 1 lb mini potato rinsed
  • 8 oz baby carrots about 1//2 a bag
  • 2 cup diced onion I use frozen
  • cups beef broth
  • 1 tablespoon Worcestershire sauce or your favorite steak sauce
  • 2 tablespoon minced garlic
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 tsp dried marjoram
  • ½ teaspoon salt or more to taste
  • ¼ teaspoon ground black pepper or more to taste
  • 1 cup green beans I use frozen

For thickening (optional)

  • 2 tablespoon potato starch
  • 2 tablespoon cold water

Instructions

  • To a well greased slow cooker, add 2 lbs beef stew meat, 1 lb mini potato, 8 oz baby carrots , 2 cup diced onion, 3½ cups beef broth, 1 tbsp Worcestershire sauce, 2 tbsp minced garlic, 1 tbsp dried thyme, 1 tbsp dried rosemary, 1 tsp dried marjoram, ½ tsp salt, and ¼ tsp ground black pepper
  • Stir to combine
  • Cook on low for 8 - 10 hours or high for 4-5 hours
  • 15 minutes before serving sitr in 1 cup green beans. Check to see if more salt or pepper is needed.

To Thicken Sauce

  • To thicken sauce, use a small bowl to make a slurry by stir together 2 tbsp potato starch and 2 tbsp cold water
  • Stir the slurry into the stew. It should start to thicken within a few minutes.

Notes

  1. If you prefer a thicker stew, increase the potato starch and water to 3 tablespoons each.
  2. For the most tender beef, cooking on low for 8-10 hours is recommended. 
  3. Fresh green beans may be used in place of frozen
  4. Store leftovers in the refrigerator for up to 4 days
  5. Freeze for up to 3 months
