Slow Cooker Creamy Sun Dried Tomato Chicken Recipe

This easy and delicious meal is made of tender chicken pieces in a lightly creamy and flavorful sauce made with sun dried tomatoes and garlic. Delicious served with pasta, rice, mashed potatoes or mashed cauliflower.

Ingredients

  • 8 chicken thighs or 4 breasts or any combination of the two
  • ¾ cup chicken stock
  • 6 cloves garlic minced
  • 6 oz sun dried tomatoes drained, if in oil
  • cup sun dried tomato pesto
  • 1 cup full fat coconut milk or heavy cream
  • ¾ cup grated Parmesan cheese or more, depending on your preference
  • 2 tablespoon potato starch optional for thickening

For Serving

  • 1 tablespoon chopped fresh basil
  • Additional parmesan cheese

Instructions

  • Place 8 chicken thighs into greased slow cooker
  • add ¾ cup chicken stock, 6 cloves garlic, 6 oz sun dried tomatoes , and ⅓ cup sun dried tomato pesto on top of chicken
  • cover and cook on low for 4-6 hours, or until chicken pieces reach an internal temperature of 165℉
  • half an hour prior to serving stir in 1 cup full fat coconut milk and ¾ cup grated Parmesan cheese. Cover and cook.
  • If you want to thicken the sauce, just before serving, use a small bowl to mix 2 tablespoon potato starch with 4 tablespoon cold water. Add this mixture to the sauce in your slow cooker and stir. It will immediately thicken.
  • top with1 tablespoon chopped fresh basil and Additional parmesan cheese for serving and enjoy!

Notes

If your chicken seems to be a bit dry or rubbery, remove it from the sauce and shred using two forks.  Stir the shredded chicken back into sauce and serve.
