Slow Cooker Caprese Chicken
This crockpot tomato and basil Caprese chicken dish makes for a fabulous meal, any time of the day. The tender chicken slow cooks together with chopped tomatoes and Italian herbs. It is then topped with fresh tomatoes, mozzaerlla sliced and fresh basil, just like it's salad cousin for the perfect finish!

- 2 lbs boneless, skinless chicken breasts or thighs 3 breasts cut in half or 6 thighs
- 2 14.5 oz cans diced tomato with juices with Italian seasonings
- 1 small onion diced
- 2 cups grape tomatoes halved, divided
- 7 oz Italian dressing/seasoning packet
- 1 tablespoon minced garlic
- 1 teaspoon dried basil
- 1 tsp salt
- thickly sliced fresh mozzarella cheese for topping
- fresh basil chopped
- balsamic glaze optional garnish
Place 2 lbs boneless, skinless chicken breasts or thighs into a greased slow cooker

Add 2 14.5 oz cans diced tomato with juices,1 small onion, 1½ cups grape tomatoes, 7 oz Italian dressing/seasoning packet , 1 tablespoon minced garlic, 1 teaspoon dried basil, and 1 teaspoon salt and stir to combine

Cover and cook on low for 4-6 hours or high for 2-3 hours. This may vary slightly since each slow cooker is slightly different. Your chicken is ready to serve when it reaches an internal temperature of 165℉
When chicken is cooked through, top with basil slices and replace slow cooker cover until melted.
Sprinkle with chopped fresh basil , remaining tomatoes, and dizzle with balsamic glaze (if desired) and serve promptly
