- 1½ lbs ground chicken
- ¾ cup hoisin sauce
- ⅓ cup carrots finely diced
- ⅓ cup celery finely diced
- ⅓ cup onions finely diced
- ⅓ cup low sodium soy sauce
- 1 teaspoon fresh ginger crushed or finely grated
- 1 tablespoon minced garlic (Jarred) 3-4 cloves if using fresh
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- cabbage slaw or carrots matchsticks (for serving)
- sliced almonds (for serving)
- sesame seeds (for serving)
- rice paper wrappers
- nonstick cooking spray
spray slow cooker with nonstick cooking spray
add all ingredients other than those specified for serving
1½ lbs ground chicken, ¾ cup hoisin sauce, ⅓ cup carrots, ⅓ cup celery, ⅓ cup onions, ⅓ cup low sodium soy sauce, 1 teaspoon fresh ginger, 1 tablespoon minced garlic , 1 tablespoon sesame oil, 1 tablespoon rice vinegar
stir to fully combine
cover and cook on low for 3-4 hours or until chicken is fully cooked through
follow instructions on rice paper wrappers package regarding soaking in water to soften. NOTE: do not over soak as they will become mushy and sticky.
wrap in spring roll wrappers with matchstick carrots and sliced almonds. Use excess sauce from the slow cooker for dipping.
