Slow Cooker Soy Ginger Beef & Vegetables is a simple, economical, steak-bite meal. This one-pot recipe cooks chunks of stew meat in a flavorful sauce until they are falling-apart tender. Carrots and broccoli cook right in the same slow cooker for extra flavor and easy clean up!

Ingredients

  • 2 lbs stew meat
  • 16 oz baby carrots
  • ½ cup soy sauce
  • ½ cup beef broth
  • 2 tablespoon ginger minced
  • tablespoon sesame oil
  • tablespoon garlic minced
  • 12 oz broccoli florets
  • sesame seeds and green onion optional garnish
  • potato starch optional for thicker sauce

Instructions

  • Place 2 lbs stew meat into a well greased slow cooker
  • Add 16 oz baby carrots, ½ cup soy sauce, ½ cup beef broth, 2 tbsp ginger, 1½ tbsp sesame oil, and 1½ tbsp garlic. Stir well to fully coat beef and carrots with seasonings
  • Cover and cook on low for 8-10 hours or high for 4-5 hours.
  • 30 minutes before serving, stir in 12 oz broccoli florets
  • Cover and allow broccoli to cook (I like mine lightly steamed, so I cook them until they're bright green
  • Optional: to thicken sauce. Mix 2 tablespoon potato starch with 2 tablespoon cold water. Slowly stir in a few teaspoonfuls of the mixture at a time until desired thickness is reached.
  • Optional: top with sesame seeds and green onion when serving

  1. I buy stew meat that is already cut into chunks, making this a hands-free recipe.
  2. Buying bagged carrots and broccoli florets makes this a true cut-free meal
  3. I use potato starch to thicken this dish because it thickens quickly and does not require cooking time to thicken
