Slow Cooker Southwest Chicken Casserole

This slow cooker casserole has all the flavor of a Southwestern fiesta! Tender juicy chicken slow cooks together with beans, corn, salsa, and spices for a delicious treat. This amazing one pot meal will please even your pickest eaters!

Ingredients

  • lbs chicken breasts boneless, skinless (2 large or 3 small breasts)
  • cups chicken broth
  • 16 oz jar salsa
  • 15 oz can corn drained
  • 15 oz can black beans rinsed and drained
  • 1 small onion diced
  • 1 tablespoon garlic minced
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 2 packages microwaveable rice I like cilantro lime flavor for this recipe, but any will do
  • cups+ shredded colby Jack or Mexican blend cheese for topping
  • fresh cilantro optional garnish

Instructions

  • To a greased slow cooker add 1½ lbs chicken breasts, 1½ cups chicken broth, 16 oz jar salsa, 15 oz can corn, 15 oz can black beans, 1 small onion, 1 tablespoon garlic, 1 tablespoon chili powder, 1 tablespoon cumin, and 1 teaspoon paprika
  • Stir to combine.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours
  • Once cooked through, remove chicken and set aside
  • Stir in 2 packages microwaveable rice and allow to cook for an additional 15 minutes or so until rice is soft
  • While rice is cooking, shred chicken
  • Stir chicken back into slow cooker and top with 1½ cups+ shredded colby Jack or Mexican blend cheese
  • Garnish with fresh cilantro (optional) and enjoy!

Boneless, skinless chicken thighs can be used in place of breasts
To dial up the heat a bit, use a spicy salsa and chopped jalepenos
