Slow Cooker Pulled BBQ Turkey Tenderloin

3.5 quart slow cooker or larger

- 1½ cups ketchup
- 1 cup dark brown sugar
- ¼ cup apple cider vinegar
- 3 tablespoon molasses
- 1 tablespoon dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon garlic powder
- ½ teaspoon smoked paprika
- 1 teaspoon black pepper
- 1 tsp salt optional
- 3 tablespoon liquid smoke - or more to taste optional
- 1.5 lbs turkey tenderloin
To a greased slow cooker, add: 1½ cups ketchup, 1 cup dark brown sugar, ¼ cup apple cider vinegar, 3 tablespoon molasses, 1 tablespoon dijon mustard, 1 tablespoon Worcestershire sauce, 1 tablespoon garlic powder, ½ teaspoon smoked paprika, 1 teaspoon black pepper, 1 teaspoon salt, and 3 tablespoon liquid smoke - or more to taste
Stir to fully combine
Add 1.5 lbs turkey tenderloin to slow cooker and flip a few times to fully coat in sauce.
Once turkey is fully coated with sauce, cover and cook on low heat for 4-6 hours or high heat for 2-3 hours*.
Remove cooked turkey from slow cooker and shred
Remove about ½ of the sauce in your slow cooker and set aside
Stir shredded turkey in to remaining sauce in crockpot
If you feel it is too dry, add back in some of the additional sauce that was set aside.
Use remaining sauce to serve for dipping or drizzling.

**Turkey can get overcooked! I will be dry and rubbery and have an overcooked flavor. The first time you make this recipe, you may want to check the internal temperature about ¾ of the way through the cooking to time. This will help you to gauge how much total time you will need. Each slow cooker is a little different. Once you figure out the ideal time for your crockpot, it should be the same each time you make it.
