Ingredients

  • lbs baby potatoes quartered
  • 28 oz frozen corn
  • 2 14.5 oz cans creamed corn
  • 2 4oz cans chili peppers
  • 2 cubanelle peppers* chopped
  • 3 stalks celery chopped
  • 1 tablespoon Tajin
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 5 cups vegetable (or chicken) stock
  • 1 cup oat milk creamer (barista blend) or heavy cream
  • potato starch optional, if you want a thicker soup
  • green onion and cilantro optional garnishes

Instructions

  • To a greased slow cooker, add 1½ lbs baby potatoes,28 oz frozen corn, 2 14.5 oz cans creamed corn , 2 4oz cans chili peppers, 2 cubanelle peppers*, 3 stalks celery 1 tablespoon Tajin , 1 teaspoon salt, ½ teaspoon pepper, and 5 cups vegetable (or chicken) stock
  • Cover and cook on low for 6-8 hours or high for 3.5 - 5 hours. Before moving to next step confirm that potato chunks can be easily pierced with a fork.
  • Temper 1 cup oat milk creamer (barista blend)by stirring some hot soup into it.
  • Add oatmilk creamer into soup and stir to fully com
  • For a thicker soup, make a slurry using a separate bowl to mix 1 tablespoon potato starch with 2 tablespoon cold water. Stir slurry into the soup. You should see it start to thicken immediately.
  • Garnish with green onion and cilantro and enjoy!

Notes

For a spicier soup, substitute jalapenos for cubanelle peppers. 
Heavy cream can be swapped with oat milk creamer for a richer soup
*Potato starch can clump up if it is not carefully and fully mixed quickly into your hot soup.  For best results, sprinkle rather than dump it in to your soup.  You should see thickening results in about 5 minutes.
