Slow Cooker Maple Lime Chicken Recipe

This Slow Cooker Maple Lime Chicken is a flavorful and easy weeknight meal. Tender chicken slowly cooks in a sweet and tangy sauce made with maple syrup, lime juice, soy sauce, and a touch of garlic and ginger.

Ingredients

  • 1½ - 2 lbs boneless, skinless chicken breasts can use thigs
  • cup pure maple syrup
  • 2 limes Juice and zest
  • ½ cup chicken broth
  • 3 tablespoon soy sauce
  • 1 tablespoon garlic minced or grated
  • potato starch optional: to thicken sauce

Instructions

  • Place 1½ - 2 lbs boneless, skinless chicken breasts into a greased slow cooker
  • Add ⅔ cup pure maple syrup, juice of 2 limes, ½ cup chicken broth, 3 tablespoon soy sauce, and 1 tablespoon garlic
  • Stir to combine and to fully coat chicken
  • Cover and cook on low for 4-6 hours or high for 2-3
  • You can confirm you are ready for the next step by checking the internal temperature of the chicken pieces. Chicken is considered safe to eat when it reaches 165℉
  • When ready, remove chicken and shred
  • Add zest of one lime to slow cooker and stir to combine
  • Stir chicken into sauce in slow cooker
  • Serve in bowls with rice, beans corn, jalapenos, and other favorites.
  • To thicken sauce make a slurry by using a separate bowl to mix 1 tablespoon potato starch with 2 tablespoon cold water. While chicken is out of slow cooker, stir slurry into the sauce. You should see it start to thicken immediately.
