Slow Cooker Honey Balsamic Beef and Butternut Squash

Tender bites of juicy beef and butternut squash are cooked low and slow on a sweet and tangy honey balsamic sauce. Perfect spooned over rice, mashed potatoes, or noodles.

Ingredients

  • lbs Stew meat The pre-cut kind makes this dish easy.
  • 20 oz Frozen Butternut squash frozen, cut into cubes
  • ½ cup Balsamic vinegar
  • ½ cup Beef broth
  • ¼ cup Honey
  • 1 tablespoon Garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Soy sauce
  • Salt and pepper to taste if needed

Instructions

  • Grease or spray slow cooker with non-stick cooking agent of choice
  • Add 1½ lbs Stew meat, 20 oz Frozen Butternut squash, ½ cup Balsamic vinegar, ½ cup Beef broth, ¼ cup Honey, 1 tbsp Garlic, 1 tbsp Worcestershire sauce, and 1 tbsp Soy sauce
  • Stir to combine
  • Cover and cook on low for 8-10 hours or high for 4-5 hours
  • Add Salt and pepper to taste

Notes

  1. For most tender beef, cooking on low for a longer period of time is best.
