Slow Cooker French Onion Meatball Pasta

French Onion Meatball Pasta is a cheesy, flavorful, one-pot slow cooker dinner that you won't want to miss. It takes all of the flavor of French onion soup and turns it into an easy, craveable meal.

Ingredients

  • 24 oz frozen meatballs I use turkey
  • 1 packet onion soup mix
  • 1 cup water
  • 2 cup beef broth
  • 1 cup chopped onion
  • 1 tablespoon butter
  • 2 tsp soy sauce
  • 1 teaspoon minced garlic
  • ½ teaspoon ground black pepper
  • ¼ teaspoon sugar
  • 9 oz fresh linguine
  • 1 cup gruyere cheese shredded
  • 1 cup mozzarella cheese shredded

Instructions

  • To a greased slow cooker, add 1 packet onion soup mix, 1 cup water, 2 cup beef broth, 1 cup chopped onion, 1 tablespoon butter, 2 teaspoon soy sauce, 1 teaspoon minced garlic, ½ teaspoon ground black pepper, and ¼ teaspoon sugar
  • Stir to combine
  • Add 24 oz frozen meatballs and toss to coat
  • Cover and cook on low for 4-6 hours or high for 2-3 hours
  • 15 minutes or so before serving, add 9 oz fresh linguine. Cover and cook checking every 5 minutes to confirm that pasta is cooking through and stirring if pasta needs to be broken apart.
  • When pasta is cooked al dente, stir in 1 cup mozzarella cheese and top with 1 cup gruyere cheese. Cover just long enough for cheese to melt.
  • Serve and enjoy!

Notes

  1. You can use homemade or store-bought meatballs for this dish
  2. If you hate cutting onions as much as I do, you can use fresh or frozen onions that are already chopped.
  3. Pull apart the pasta a bit before adding it to your slow cooker so it doesn't cook in one big clump.
  4. If you would rather use dried pasta, I suggest cooking it stovetop first to avoid it becoming overly mushy.
  5. This is not an overly saucy meal.  To make more sauce, add a second cup of water and a second packet of onion soup mix.
