- 2 lbs chicken breasts
- 2 cups marinara sauce homemade or jarred
- 14 oz can diced tomatoes
- 2 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1 cup full fat coconut milk
- 2 tablespoon fresh basil finely chopped (plus more for optional garnish)
- salt and pepper to taste
add 2 lbs chicken breasts to bottom of greased slow cooker
place 2 cups marinara sauce, 14 oz can diced tomatoes, 2 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon salt, and 1 teaspoon dried basil on top of chicken
cover slow cooker and cook 4-6 hours on low or 2-3 hours on high
carefully remove hot chicken from slow cooker and set aside.
temper coconut milk with some of the hot liquid from the slow cooker (to avoid curdling).
stir 1 cup full fat coconut milk, and 2 tablespoon fresh basilinto liquid in slow cooker
shred chicken breasts and mix into sauce in slow cooker
add salt and pepper to taste, if needed and enjoy!
