Made with pantry staples and sprinkled with melty chocolate chips, this casserole delivers the comforting flavor of pancakes with the ease of a slow cooker.

- 24 - 30 pancakes frozen or homemade
- 6 eggs
- 2 cups milk of choice I use almond vanilla
- 1 tablespoon cinnamonn sugar
- 1 cup chocolate chips or more!
- 1 teaspoon pure vanilla extract
cut 24 - 30 pancakes in half
Add halved pancakes to a greased slow cooker. I like to line them up, you can add them anyway you like
In a seperate bowl, whisk together 6 eggs, 2 cups milk of choice, 1 teaspoon pure vanilla extract, and 1 tablespoon cinnamonn sugar
Pour egg mixture over pancakes
Cover and let pancake mixture sit in the refridgerator for 3 - 12 hours
When you are ready to cook, sprinkle 1 cup chocolate chips over top
Cook on low for 4 hours or high for 2
Turn down to warm and serve with syrup, whipped cream, fresh fruit or any other favorite pancake toppings
Dairy milk can be used in this recipe as well
