Slow Cooker Chicken Rice & Broccoli Casserole Recipe

Slow cooker chicken broccoli and rice is the perfect one pot meal. It is creamy, filling, delicious and easy to make. You will love this picky eater approved dish.

Ingredients

  • 2-3 boneless, skinless chicken breasts
  • 1 tbsp. Dijon mustard
  • 1 cup chicken broth
  • 4-5 cloves minced garlic
  • 1 tsp. onion powder
  • 8 oz. cream cheese cut into chunks
  • ½ cup shredded Colby jack cheese
  • ¾ cup shredded cheddar cheese divided
  • ½ cup sour cream
  • 2 8 oz microwaveable rice packets
  • 2 cups broccoli florets

Instructions

  • Add 1 tbsp. Dijon mustard, 1 cup chicken broth, 4-5 cloves minced garlic, 1 tsp. onion powder, 8 oz. cream cheese, ½ cup shredded Colby jack cheese, and half of the cheddar cheese to a greased slow cooker and stir to combine.
  • Place 2-3 boneless, skinless chicken breasts into sauce and spoon some of the sauce/cheese mixture overtop
  • Cover and cook on low for 4-6 hours or 2-4 hours on high
  • 15 - 30 minutes before serving, remove chicken from slow cooker and cut into bite-sized pieces
  • Temper ½ cup sour cream by adding some of the hot liquid from the slow cooker into it to bring to a higher temperature. Stir tempered sour cream into the sauce.
  • Stir chicken, 2 8 oz microwaveable rice packets and 2 cups broccoli florets into the sauce
  • Cover and allow rice and broccoli to cook
  • Top with remaining cheddar cheese and cover just until melted

Notes:
  1. Be sure to fully break up the rice from the microwaveable pouch before adding it to your slow cooker.  Otherwise, it will cook in one big clump.

  3. If you are short on time and want your dish to cook faster, cut chicken into chunks before cooking.
