Slow Cooker Chicken Rice & Broccoli Casserole Recipe

- 2-3 boneless, skinless chicken breasts
- 1 tbsp. Dijon mustard
- 1 cup chicken broth
- 4-5 cloves minced garlic
- 1 tsp. onion powder
- 8 oz. cream cheese cut into chunks
- ½ cup shredded Colby jack cheese
- ¾ cup shredded cheddar cheese divided
- ½ cup sour cream
- 2 8 oz microwaveable rice packets
- 2 cups broccoli florets
Add 1 tbsp. Dijon mustard, 1 cup chicken broth, 4-5 cloves minced garlic, 1 tsp. onion powder, 8 oz. cream cheese, ½ cup shredded Colby jack cheese, and half of the cheddar cheese to a greased slow cooker and stir to combine.
Place 2-3 boneless, skinless chicken breasts into sauce and spoon some of the sauce/cheese mixture overtop
Cover and cook on low for 4-6 hours or 2-4 hours on high
15 - 30 minutes before serving, remove chicken from slow cooker and cut into bite-sized pieces
Temper ½ cup sour cream by adding some of the hot liquid from the slow cooker into it to bring to a higher temperature. Stir tempered sour cream into the sauce.
Stir chicken, 2 8 oz microwaveable rice packets and 2 cups broccoli florets into the sauce
Cover and allow rice and broccoli to cook
Top with remaining cheddar cheese and cover just until melted
Notes:
- Be sure to fully break up the rice from the microwaveable pouch before adding it to your slow cooker. Otherwise, it will cook in one big clump.
