Slow Cooker Chicken Gnocchi Soup

This chicken gnocchi soup is the ultimate comfort food. It is packed with tender chicken, fluffy gnocchi, and veggies. A hearty soup that is effortlessly delicious.

Ingredients

  • 1 - 1.5 lbs boneless, skinless chicken breast
  • 1 small onion chopped
  • 2 large carrots large chopped
  • 2 large celery stalks large chopped
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • ½ teaspoon salt or more to taste
  • ¼ teaspoon pepper or more to taste
  • 6 cups chicken broth
  • 13.5 oz can full fat coconut milk see above for substitution ideas
  • 16 oz fresh gnocchi frozen works too
  • 5 oz fresh baby spinach
  • parmesan cheese optional garnish
  • fresh basil optional garnish

Instructions

  • To a greased slow cooker, add 1 - 1.5 lbs boneless, skinless chicken breast, 1 small onion, 2 large carrots, 2 large celery stalks, 4 cloves garlic, 1 teaspoon dried thyme, 1 teaspoon dried basil, ½ teaspoon salt, ¼ teaspoon pepper, and 6 cups chicken broth
  • Cover and cook on low for 6-8 hours or high for 3-4 hours
  • After cooking, remove chicken from soup and shred or cut into bite sized pieces
  • Add 13.5 oz can full fat coconut milk, 16 oz fresh gnocchi, and 5 oz fresh baby spinach and stir to combine
  • Add chicken back to slow cooker and stir to combine. Cover and allow soup to heat back up and gnocchi to cook through (about 15 minutes or so)
  • Garnish with parmesan cheese and fresh basil, serve promptly and enjoy!
