Slow Cooker Chicken Gnocchi Soup

- 1 - 1.5 lbs boneless, skinless chicken breast
- 1 small onion chopped
- 2 large carrots large chopped
- 2 large celery stalks large chopped
- 4 cloves garlic minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- ½ teaspoon salt or more to taste
- ¼ teaspoon pepper or more to taste
- 6 cups chicken broth
- 13.5 oz can full fat coconut milk see above for substitution ideas
- 16 oz fresh gnocchi frozen works too
- 5 oz fresh baby spinach
- parmesan cheese optional garnish
- fresh basil optional garnish
To a greased slow cooker, add 1 - 1.5 lbs boneless, skinless chicken breast, 1 small onion, 2 large carrots, 2 large celery stalks, 4 cloves garlic, 1 teaspoon dried thyme, 1 teaspoon dried basil, ½ teaspoon salt, ¼ teaspoon pepper, and 6 cups chicken broth
Cover and cook on low for 6-8 hours or high for 3-4 hours
After cooking, remove chicken from soup and shred or cut into bite sized pieces
Add 13.5 oz can full fat coconut milk, 16 oz fresh gnocchi, and 5 oz fresh baby spinach and stir to combine
Add chicken back to slow cooker and stir to combine. Cover and allow soup to heat back up and gnocchi to cook through (about 15 minutes or so)
Garnish with parmesan cheese and fresh basil, serve promptly and enjoy!
