Slow Cooker Chicken Caesar Pasta With Asparagus Recipe

Tender chicken and chewy pasta all cooked together in one pot is a creamy, delicious weeknight win. Toss in some asparagus towards the end of cooking for and amazing one-pot chicken meal!

Ingredients

  • 1.5 - 2 lbs boneless, skinless chicken breasts
  • 12 oz caesar salad dressing store bought or homemade
  • 8 oz whipped cream cheese
  • cup chicken broth
  • ½ cup parmesan cheese grated
  • 1 tablespoon Italian seasoning
  • 1 tablespoon capers
  • 1 tablespoon garlic minced
  • 18 - 20 oz fresh pasta can use frozen too
  • black pepper optional - to taste
  • 1 lb fresh asparagus optional cut into bite sized pieces

Instructions

  • Place 1.5 - 2 lbs boneless, skinless chicken breasts into a greased slow cooker
  • Add 12 oz caesar salad dressing, 8 oz whipped cream cheese, 1¼ cup chicken broth, ½ cup parmesan cheese, 1 tablespoon Italian seasoning, 1 tablespoon capers, and 1 tablespoon garlic to slow cooker and stir to combine
  • Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours
  • cut asparagus into bite sized pieces
  • After cooking time* remove chicken from slow cooker and set aside
  • Stir in 18 - 20 oz fresh pasta and 1 lb fresh asparagus (if using) cover and continue to cook
  • Using two forks, shred chicken and stir into pasta/sauce mixture in slow cooker
  • When pasta is cooked (about 30 minutes in my slow cooker) add black pepper to taste, if needed.
  • Serve promptly and enjoy!

Bonesless skinless chicken thighs can be used in place of breasts
