Slow Cooker Cheesy Chicken Nachos
Tender ground chicken melded into a creamy cheese sauce full of a flavorful spices,beans, and salsa. Just perfect for piling onto crispy tortilla chips! NO VELVEETA!

- 2 lbs ground chicken
- 12 oz whipped cream cheese
- 15.5 oz can black beans rinsed and drained
- 15.5 oz chunky salsa
- 8 oz diced chili peppers
- ½ cup sour cream
- 8 oz mozzarella cheese shredded, divided
- 8 oz Mexican blend cheese shredded, divided
- 8 oz sharp cheddar cheese shredded, divided
- ¼ cups taco seasoning store bough or homemade. See below for homemade recipe
- 4 oz pickled jalapeno optional
- green onion optional garnish

Place 2 lbs ground chicken into a greased slow cooker and use a rubber spatula to break apart slightly
Add 12 oz whipped cream cheese, 15.5 oz can black beans, 15.5 oz chunky salsa, 8 oz diced chili peppers,½ cup sour cream, 4 oz mozzarella cheese, 4 oz Mexican blend cheese, 4 oz sharp cheddar cheese, ¼ cups taco seasoning, and 4 oz pickled jalapeno (if using) and stir well to fully mix
Cover and cook on low for for 6-8 hours or high for 3-4 hours
After cooking, stir an additional cup of cheese into your slow cooker and allow to melt in. Remaining cheese can be used to top individual plates of nachos.
Serve over tortilla chips with your favorite toppings such as green onion (see above for suggestions)

To confirm that chicken is fully cooked and safe to eat, insert a meat thermometer into the center most part of the slow cooker. Chicken is safe to consume when it reaches 165℉ To make this dish spicier, use spicy salsa and spicy jalapenos

Homemade taco seasoning
- 4 tablespoon chili powder
- 1.5 tablespoon cumin
- 1.5 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1 teaspoon dried cilantro
Add all ingredients and stir. Store in a cool, dry, air-tight container.
