Slow Cooker Buffalo Cauliflower Mac and Cheese

This creamy, cheesy dish is the ultimate comfort food with a spicy twist! Cauliflower is cooked until tender in a buffalo sauce infused cheese sauce. Add in the pasta and you have a dish that's both indulgent and satisfying.

Equipment

  • 3.5 quart slow cooker or larger
  • cutting board and knife

Ingredients

  • 1 head cauliflower cut into medium florets
  • 12 oz Buffalo sauce
  • 8 oz whipped cream cheese
  • 1 cup ranch dressing
  • 1 cup shredded cheddar
  • 1 cup blue cheese crumbles, optional topping
  • 14-16 oz Ready pasta fresh or fully cooked pasta can also be used*
  • green onion garnish

Instructions

  • Cut 1 head cauliflower into florets and add to a well greased slow cooker
  • Add 12 oz Buffalo sauce, 8 oz whipped cream cheese, 1 cup ranch dressing, and 1 cup shredded cheddar and stir to combine
  • Cook on low for 4-6 hours or high for 2-3 hours. You are ready for the next step when larger florets can be easily pierced with a fork
  • Stir in 14-16 oz Ready pasta
  • top with 1 cup blue cheese and cover allowing cheese to melt and pasta to cook through
  • top with green onion and serve promptly. Enjoy!!
