Slow Cooker Black Bean Tacos

Black bean tacos are an easy, delicious, and economical slow cooker dish. This plant-based recipe uses just a few pantry staples - perfect for busy weeknights, meatless Mondays, or effortless meal prep. Serve in warm tortillas with your favorite toppings!

Ingredients

  • 16 oz dried black beans rinsed and drained
  • 15 oz chunky salsa spice level based on your preference
  • 1 cup diced onion
  • 7 oz can diced green chili
  • cup taco seasoning see below for homemade taco seasoning recipe
  • tablespoon minced garlic
  • 4 cups vegetable broth can use chicken (not plant-based) or onion

Instructions

  • Rinse beans over a sink to remove dirt and check for stones or other foreign particles
  • Add 16 oz dried black beans (rinsed), 15 oz chunky salsa, 1 cup diced onion, 7 oz can diced green chili, ⅓ cup taco seasoning, 1½ tablespoon minced garlic, and 4 cups vegetable broths to a greased slow cooker
  • Stir to combine and cover
  • Cook on high for 5-6 hours or on low for 8-10 hours
  • Stir and serve in taco shells with your favorite taco topping (see above for suggestions)

Nutritional values are for bean mixture only.  Taco shells and other toppings are not included here. This is a great recipe to double or even triple.  Leftovers freeze really well and reheat easily for future grab-and-go meals!  
For spicier tacos, use hot diced chili peppers  and hot salsa. a
Homemade taco seasoning (makes more than you need for just this recipe
  • 4 tablespoons chili powder
  • 1.5 tablespoons cumin
  • 1.5 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • 1 teaspoon dried cilantro
Add all ingredients and stir.  Store in a cool, dry, air-tight container.
