Slow Cooker Black Bean Tacos
Black bean tacos are an easy, delicious, and economical slow cooker dish. This plant-based recipe uses just a few pantry staples - perfect for busy weeknights, meatless Mondays, or effortless meal prep. Serve in warm tortillas with your favorite toppings!

- 16 oz dried black beans rinsed and drained
- 15 oz chunky salsa spice level based on your preference
- 1 cup diced onion
- 7 oz can diced green chili
- ⅓ cup taco seasoning see below for homemade taco seasoning recipe
- 1½ tablespoon minced garlic
- 4 cups vegetable broth can use chicken (not plant-based) or onion
Rinse beans over a sink to remove dirt and check for stones or other foreign particles
Add 16 oz dried black beans (rinsed), 15 oz chunky salsa, 1 cup diced onion, 7 oz can diced green chili, ⅓ cup taco seasoning, 1½ tablespoon minced garlic, and 4 cups vegetable broths to a greased slow cooker
Stir to combine and cover
Cook on high for 5-6 hours or on low for 8-10 hours
Stir and serve in taco shells with your favorite taco topping (see above for suggestions)

- 4 tablespoons chili powder
- 1.5 tablespoons cumin
- 1.5 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1 teaspoon dried cilantro
Add all ingredients and stir. Store in a cool, dry, air-tight container.
