Slow Cooker Beef Teriyaki With Sugar Snap Peas

Ingredients

  • 2 lbs stew meat in bite sized chunks
  • 1 red bell pepper cut into thin strips
  • 1 cup teriyaki sauce
  • ½ cup beef broth
  • ¼ cup honey
  • 2 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 8 oz sugar snap peas
  • 2 tablespoon cornstarch optional, for thickening
  • 2 tbsp water optional, for thickening

Instructions

  • place 2 lbs stew meat into a greased slow cooker
  • add 1 red bell pepper (sliced), 1 cup teriyaki sauce, ½ cup beef broth, ¼ cup honey, 2 tablespoon sesame oil, 1 teaspoon garlic powder, and 1 teaspoon ground ginger and stir to fully combine and coat beef
  • cover and cook on low heat for 8-10 hours or high heat for 4-5 hours
  • If you would like your sauce a bit thicker, create a slurry by mixing together 2 tablespoon cornstarch and 2 tablespoon cold water. stir this mixture into your slow cooker about 1 hour prior to serving.
  • About 15 minutes prior to serving, add 8 oz sugar snap peas to your slow cooker and stir to combine (you can add them a bit earlier if you prefer them well done)
  • Serve and enjoy

To keep your snow peas a brighter green, watch closely after adding them to your slow cooker and serve promptly, once they reach desired level.

An alternative method for thickening your sauce is to cook with the lid off for the last 30 -60 minutes to allow for some evaporation.
