Slow Cooker Asian Steak Bites and Potatoes

This one pot Asian steak bites and potatoes dinner is amazingly easy to make but beyond delicious to eat. Tender, juicy and flavorful bites of beef cooked together with mini potatoes and asparagus is the perfect dinner - any night of the week.

Equipment

Ingredients

  • 2 lbs stew meat cut into 2" chunks
  • 24 oz potatoes baby potatoes or large potatoes cut into 2" chunks
  • 6 oz tomato paste
  • ½ cup soy sauce
  • ½ cup honey
  • 2 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 3 cloves garlic minced or grated
  • 10 oz asparagus or green beans
  • sesame seeds and sliced green onion garnish (optional)

Instructions

  • grease or spray slow cooker with non-stick cooking agent of choice
  • add stew meat and potatoes into the bottom of the slow cooker
    2 lbs stew meat, 24 oz potatoes
  • add in all sauces and spices and stir to combine
    6 oz tomato paste, ½ cup soy sauce, ½ cup honey, 2 tablespoon rice vinegar, 1 tablespoon toasted sesame oil, 3 cloves garlic
  • Cook on low for 8-10 hours*
  • 15 - 30 minutes prior to serving, place a piece of foil on top of slow cooker ingredients. Place asparagus (seasoned anyway you like) on top of foil

  • cover and cook for an additional 15 - 30 minutes until asparagus is cooked to your liking
  • sprinkle meat and potatoes with sesame seeds and sliced green onion for garnish

Notes

Green beans can be substituted for asparagus if you prefer.  
This recipe was made using pre-cut stew meat.  See write up above for details on other cuts of meat that can be used.  
This dish can also be cooked on high for 4-5 hours, but low and slow is recommended for best results.
