place chicken chunks into the bottom of the slow cooker
1.25 - 1.5 lbs chicken thighs
add in onion, broth, spices and mushrooms
1 cup onion, 1 tablespoon garlic, ½ cup chicken broth, ⅓ teaspoon salt, ¼ teaspoon black pepper, 8 oz white mushrooms
cover and cook on low for 3-5 hours, until chicken is cooked through.
about half an hour prior to serving, whisk together evaporated milk and flour in a separate bowl. add the mixture into slow cooker. cover and allow flour to cook.
1 cup evaporated milk, 3 tablespoon flour
10 minutes or so before serving, stir in grated parmesan cheese and spinach leaves.
2 cups baby spinach leaves, 1.5 - 2 cup parmesan cheese
For best results, serve promptly once spinach has wilted.
