Air Fryer Hash Browns with Vegetables - A Complete Side Dish

Crispy air fryer hash browns with mixed vegetables are a straight-from-frozen treat. No chopping or thawing is required for this easy dish. Golden, flavorful potatoes with tender veggies make the perfect side dish for breakfast or anytime!

Ingredients

  • 20 oz frozen hash brown potatoes diced
  • 1 cup frozen peas and carrots diced
  • ½ cup frozen corn kernels
  • ½ cup frozen onion diced
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • avocado oil spray or olive oil

Instructions

  • In a large bowl, mix together 20 oz frozen hash brown potatoes, 1 cup frozen peas and carrots, ½ cup frozen corn kernels, ½ cup frozen onion , 1 tsp salt, 1 tsp garlic powder, 1 tsp onion powder, and ¼ tsp black pepper
  • Spread into a single layer on parchment paper in air fryer
  • Spray with avocado oil spray and air fry at 400℉ for 10 minutes
  • Shake or stir ingredients and cook for an additional 10 minutes
  • Shake or stir ingredients again. If you like your potatoes extra crispy, air fry for another 10 minutes. Or, you can choose to serve without this last step

Notes

  1. If you are using a toaster oven-style air fryer like I am, this recipe may require a little extra cooking time. A basket-style air fryer will finish faster.
  2. Don't overcrowd your potatoes/veggies.  Lay them in a single layer.  This is also more important with an oven-style air fryer. 
  3. Refer to the above for variations and suggestions.  
  4. Always cook from frozen to avoid the extra moisture that is released during thawing.  This will help you to get the crispiest results.
