- 2 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 2 limes juiced
- 6 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon chili lime seasoning
- 1 teaspoon dried cilantro
- 1 teaspoon honey
- 1 large cilantro bunch stems removed, leaves chopped
- 1 cup sour cream
add 2 lbs boneless, skinless chicken breasts to the bottom of a greased slow cooker
add in 1 cup chicken broth, the juice of 2 limes, 6 cloves garlic, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon chili lime seasoning, 1 teaspoon dried cilantro, and 1 teaspoon honey
cover and cook on low for 4-6 hours or high for 3-4 hours
15 minute or so prior to serving, remove chicken breasts and set aside
temper sour cream by stirring some of the hot liquid from your slow cooker into it
add 1 large cilantro bunch and 1 cup sour cream to the contents of your slow cooker and use an immersion blender to fully blend into a smooth sauce. Be sure to blend all garlic and cilantro fully.
shred chicken breasts and stir them into sauce in slow cooker.
serve when ready.
Notes:
Boneless, skinless thighs can be used in place of breasts.
