Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 2 limes juiced
  • 6 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili lime seasoning
  • 1 teaspoon dried cilantro
  • 1 teaspoon honey
  • 1 large cilantro bunch stems removed, leaves chopped
  • 1 cup sour cream

Instructions

  • add 2 lbs boneless, skinless chicken breasts to the bottom of a greased slow cooker
  • add in 1 cup chicken broth, the juice of 2 limes, 6 cloves garlic, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon chili lime seasoning, 1 teaspoon dried cilantro, and 1 teaspoon honey
  • cover and cook on low for 4-6 hours or high for 3-4 hours
  • 15 minute or so prior to serving, remove chicken breasts and set aside
  • temper sour cream by stirring some of the hot liquid from your slow cooker into it
  • add 1 large cilantro bunch and 1 cup sour cream to the contents of your slow cooker and use an immersion blender to fully blend into a smooth sauce. Be sure to blend all garlic and cilantro fully.
  • shred chicken breasts and stir them into sauce in slow cooker.
  • serve when ready.
