Slow Cooker Turkey Lentil Soup

- 1 - 1.5 lbs ground turkey browned
- 2 cups mirepoix diced (or one medium onion, two medium carrots, and two medium celery stalks)
- 1.5 cups lentils dried
- 15 oz can tomato sauce
- 15 oz can diced tomatoes with all juices
- 2 cups cabbage chopped
- 6 cups broth or stock I use beef broth
- 2 tablespoon Worcestershire sauce
- 1 sprig fresh thyme
- 2 bay leaves
- t tablespoon soy sauce I prefer low sodium
- 8 oz chopped kale
- salt and pepper to taste
- non stick cooking spray
add all ingredients other than thyme, bay leaves and kale
1 - 1.5 lbs ground turkey, 2 cups mirepoix, 1.5 cups lentils, 15 oz can tomato sauce, 15 oz can diced tomatoes with all juices, 2 cups cabbage, 6 cups broth or stock, 2 tablespoon Worcestershire sauce, t tablespoon soy sauce
place thyme sprig and bay leaves on top of soup, cover and cook on low for 6-8 hours.

30 minutes prior to serving, remove bay leaves and thyme. stir in kale. cover and continue to cook.
8 oz chopped kale
add salt and pepper to taste and enjoy!

*Be sure ground turkey is cooked prior to adding to slow cooker.
** Prior to adding lentils to slow cooker, place in a strainer and rinse it thoroughly and check for any stones or other foreign objects.
