Lazy Turkey Meatball Soup

This easy soup is made using frozen meatballs and veggies making it a super easy meal to throw together anytime. A full meal in a bowl!

  • 6 quart slow cooker
  • slow cooker liner (optional)
  • measuring spoons and cups


  • 1 lb Frozen Turkey Meatballs I used Wegmans brand, but any will do
  • 16 oz frozen Italian blend vegetables You can switch the type of veggies to suit your preferences
  • 2 14 oz diced tomato with roasted onion and garlic plain diced tomato will work too
  • 6 cups beef broth
  • 1 teaspoon dried oregano
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme


  • I always start with a slow cooker liner.  Nice and lazy ;)
    note that a liner is not required and many prefer to skip this step.

  • Add frozen vegetables, turkey meatballs  and diced tomatoes (Including juice in can) to pot.
  • Sprinkle oregano over contents and then our beef broth over entire mixture
  • Place rosemary and thyme gently on top 
    rosemary sprig on top of soup pot contents
  • Cover and cook for 8 hours on low or 4 hours on high
    soup that has finished cooking
  • Keep warm until ready to serve!


Frozen left overs can be easily defrosted in a microwave or right back in a slow cooker!
