Lazy Slow Cooker Corn Spoonbread Recipe

A deliciously spoonable mashup of sweet corn, corn muffin and eggs. The perfect side dish for any meal!

Equipment

  • 3.5 qt slow cooker or larger
  • mixing spoons and cups
  • mixing bowl
  • wire whisk

Ingredients

  • 2 eggs lightly beaten
  • 1 8.5 oz package corn muffin mix
  • 1 14.5 oz can creamed corn
  • 1 15.25 oz can sweet corn, drained
  • ¾ cup sour cream
  • cup whipped cream cheese
  • ¼ cup salted butter, melted

Instructions

  • beat eggs
  • add in remaining ingredients and stir well until fully combined
  • pour mixture into a lined or well greased slow cooker
  • cover and cook on high for 1.5 - 3 hours until fully cooked through
  • enjoy!!

Notes

be sure to grease or spray your slow cooker with a non-stick cooking agent before adding ingredients.  This will make both serving and clean up much easier.
