If you are using a slow cooker liner, place 2 lbs flank or sirloin steak strips in liner (if you are not using a liner, put beef into some sort of bag that you can tightly close, like a zip lock bag OR a mixing bowl)
add ¼ cup potato starch to bag and close tightly (or bowl)
shake bag so that all beef strips are coated in starch (or stir)
add ½ cup soy sauce , ½ cup beef broth, ⅓ cup brown sugar , 1½ tablespoon minced garlic, 1 tablespoon toasted sesame oil, and 1 teaspoon ground ginger to bag (or bowl
close bag again and shake to coat (or stir to mix)
If using a slow cooker liner, place it in slow cooker, If not, dump ingredients into slow cooker
Add 1 red pepper, sliced on top of meat mixture.
cover and cook on low 6-8 hours.
When you are ready to serve, stir and top with sesame seeds and chopped green onion
