Slow Cooker Roasted Tomatoes and Garlic

Use your crockpot to slowly bring out the delicious flavors of fresh roasted grape or cherry tomatoes and garlic cloves.

  • 1 cup whole garlic cloves
  • 1.5 lbs grape tomatoes
  • 3 tablespoon olive oil extra virgin
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper


  • remove all paper from garlic cloves and cut off the woody ends, if necessary
    1 cup whole garlic cloves
  • spray slow cooker with non-stick spray
  • place tomatoes and garlic into slow cooker
    1 cup whole garlic cloves, 1.5 lbs grape tomatoes
  • drizzle with olive oil, then sprinkle with salt and pepper
    3 tablespoon olive oil, 1 teaspoon sea salt, ½ teaspoon black pepper
  • cover and cook on high until tomatoes and garlic are both soft.
  • serve as and enjoy!


Be very careful when popping any tomatoes that remain whole.  The juice and seeds will be VERY HOT and can squirt.  
If serving make-your-own style, I suggest popping any remaining whole tomatoes with a fork first.  It is also a good idea to allow the dish to cool a bit before serving.
