non-stick spray
- 1.5 - 2 lbs stew meat cut into chunks
- 20 oz can pineapple chunks with juice
- 2 large bell peppers red, yellow or orange, cut into chunks
- 1 cups onion chopped
- ⅓ cup soy sauce
- 2 tablespoon rice vinegar
- 2 tablespoon small tapioca pearls optional - helps to thicken sauce
- 2 tablespoon fresh ginger grated
- 1 tablespoon garlic minced
spray slow cooker with non-stick spray of choice
Cut stew meat into cubes (you can also purchase it pre-cut)
1.5 - 2 lbs stew meat
dice peppers and chop onion
2 large bell peppers, 1 cups onion
place all ingredients into slow cooker and stir to combine
1.5 - 2 lbs stew meat, 20 oz can pineapple chunks with juice, 2 large bell peppers, 1 cups onion, ⅓ cup soy sauce, 2 tablespoon rice vinegar, 2 tablespoon small tapioca pearls, 2 tablespoon fresh ginger, 1 tablespoon garlic
cover and cook for 6-8 hours.
remove lid and stir prior to serving

All the juice from the pineapple can should be added to the slow cooker.
Sliced green onions and sesame seeds make for a great finishing touch on top of your beef dish.
Great served over rice, riced cauliflower, or rice noodles.
