Lazy Slow Cooker Chicken Lettuce Wrap Recipe

- 2 lbs. boneless chicken breast
- 2 8oz cans water chestnuts drained
- 2 8oz cans bamboo shoots drained
- ½ cup hoisin sauce
- ½ cup green onion sliced
- ½ cup diced celery
- ¼ cup low sodium soy
- 1 tbsp. fresh grated ginger
- 1 tbsp. minced garlic
- 1 tbsp. sesame oil
- 1 tbsp. rice vinegar
place chicken breasts in slow cooker
2 lbs. boneless chicken breast
add remaining ingredients
2 8oz cans water chestnuts, 2 8oz cans bamboo shoots, ½ cup hoisin sauce, ½ cup green onion, ½ cup diced celery, ¼ cup low sodium soy, 1 tbsp. fresh grated ginger, 1 tbsp. minced garlic, 1 tbsp. sesame oil, 1 tbsp. rice vinegar
cover and cook on low for 4-6 hours. To confirm that chicken is done, use a meat thermometer to check internal temperature of chicken. Once it reached 165ºF, it is safe to consume.
remove chicken breast from slow cooker and shred into small pieces.
return shredded chicken to slow cooker and mix all ingredients together
serve in lettuce cups and enjoy!
