Lazy Slow Cooker Greek Turkey Meatloaf

The crockpot turkey meatloaf is a delicious and lighter version of a classic favorite. Feta cheese and sun dried tomatoes add a perfect flavorful touch

Ingredients

  • 2.5 lbs Ground turkey not lean, if possible
  • 3 eggs
  • cups feta cheese
  • 1 cup bread crumbs I use whole wheat panko crumbs
  • 10 oz jar drained sun dried tomatoes cut into pieces
  • cup chopped fresh parsley
  • 1 tablespoon minced garlic
  • ½ teaspoon fresh ground pepper
  • non-stick spray

Instructions

  • place slow cooker liner into slow cooker vessel, if using
  • spray inside of liner, or inside of cooker if not using liner with non-stick spray of choice

  • add all ingredients into slow cooker and mix thoroughly. I suggest using your hands for this.
    2.5 lbs Ground turkey, 3 eggs, 1½ cups feta cheese, 1 cup bread crumbs, 10 oz jar drained sun dried tomatoes, ⅓ cup chopped fresh parsley, 1 tablespoon minced garlic, ½ teaspoon fresh ground pepper
  • cover and cook on low for 4-5 hours, depending on your slow cooker. Turkey can dry out so it is good to keep an eye on it, it is considered safe to serve when it reaches an internal temperature of 165°F
  • serve with crumbled feta cheese and sun dried tomato pesto

Notes

Be careful not to over work your ground turkey.  Overmixed ground turkey can turn mushy.
