Lazy Slow Cooker Greek Chicken

This delicious crockpot Greek chicken dish will quickly become a go-to dish. Tender chicken and veggies in a light lemony sauce topped with olives and feta cheese.

Equipment

  • 4 quart slow cooker or larger
  • Knife and cutting board
  • Mixing Spoon

Ingredients

  • 2 chicken breasts and 4 thighs can use 4 breasts or 8 thighs if you don't want to mix
  • 24 oz baby potatoes can be cut in half unless really tiny
  • 3 yellow squash, cut in chunks
  • 1 cup chicken broth
  • 1 lemon, juiced
  • 1 tablespoon minced garlic
  • 2 teaspoon oregano
  • ½ teaspoon pepper
  • ½ cup kalamata olives
  • crumbled feta cheese

Instructions

  • place slow cooker liner in vessel (if using)
  • mix together chicken broth, lemon juice, garlic, oregano and pepper
  • add chicken to mixture and make sure it is covered on all sides. If you have time, you can take the liner out of the slow cooker and allow to marinate in the refrigerator for up to 2 hours.
  • add potatoes and squash and cook on low 4-6 hours
  • just prior to serving, mix in kalamata olives and top with feta cheese.
