Lazy Slow Cooker Candied Sweet Potato
This delicious candied sweet potato dish is the perfect holiday treat. Potatoes are slow cooked to sweet perfection and then topped with marshmellowy goodness!

- 2 Lbs diced fresh sweet potato or yams I generally use yams
- 2 tablespoon butter
- 1 cup maple syrup Pure maple syrup is best
- ½ teaspoon ground cinnamon
- ½ teaspoon pure vanilla
- pinch kosher salt
- 2 cups mini marshmallows
place diced sweet potato into slow cooker
2 Lbs diced fresh sweet potato or yams
add remaining ingredients except marshmallows and stir gently to mix
2 tablespoon butter, 1 cup maple syrup, ½ teaspoon ground cinnamon, ½ teaspoon pure vanilla, pinch kosher salt
cook on low for 3.5 hours. Open pot an stir contents. Top with marshmallows and cook for another 30 minutes. Turn pot down to warm until ready to serve.
2 cups mini marshmallows
Notes: leftovers can be stored in either the refrigerator or freezer (see above for details)
When reheating leftovers, add fresh marshmallows on top.
My slow cooker sweet potatoes are ready to serve after about 3.5 hours.
