- non stick cooking spray
- ½ - 2 lbs boneless, skinless chicken thighs
- ½ cup tequila I used anejo but any will work
- 4 oz lime juice
- 2 tablespoon agave syrup
- 4 cloves garlic pressed or minced
- 1 teaspoon dried cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- zest of ½ lime
- fresh cilantro garnish (optional)
spray slow cooker with non-stick cooking spray

add all ingredients to slow cooker and stir to combine
½ - 2 lbs boneless, skinless chicken thighs, ½ cup tequila, 4 oz lime juice, 2 tablespoon agave syrup, 4 cloves garlic, 1 teaspoon dried cilantro, 1 teaspoon cumin, 1 teaspoon chili powder, zest of ½ lime
Cover and cook on low for 3-4 hours or until chicken reaches an internal temperature of 165℉
remove chicken and slice into strips
serve over rice, in tacos or bowls and enjoy!!
Chicken breast can be substituted for thighs if you prefer.
NOTE: The alcohol in your tequila will not cook off as long as the lid is on your slow cooker. To cook off some of the alcohol, cook on high with the lid off for the last 30-60 minutes. (Please see written instructions above for more details)
non-alcoholic tequila or chicken broth can be used in place of tequila.
