Slow Cooker Chicken and Bok Choy Recipe

Slow cooker chicken and bok choy is an easy and delicious Asian-inspired meal you will want to make on repeat. Tender juicy chicken slow cooked to perfection in a sweet, savory sauce that is perfect with the bite of bok choy.

Equipment

Ingredients

  • ¼ cup hoisin sauce
  • ¼ cup rice wine
  • 3 tablespoon soy sauce
  • 2 tablespoon honey
  • 1 tablespoon ginger paste or minced fresh ginger
  • lbs chicken breast
  • 3 leeks white and light green parts cut into half moons
  • 1 medium bok choy cut into stips width-wise.
  • sticky rice for serving
  • sliced green onion and sesame seeds garnish

Instructions

  • spray slow cooker with non-stick cooking spray
  • add all sauce ingredients with leeks to slow cooker and stir
    ¼ cup hoisin sauce, ¼ cup rice wine, 3 tablespoon soy sauce, 2 tablespoon honey, 1 tablespoon ginger paste, 3 leeks
  • add chicken breasts into slow cooker and cover with sauce as much as possible
    1½ lbs chicken breast
  • cover and cook on low for 3-5 hours or until chicken reaches and internal temperature of 165°F
  • remove chicken from slow cooker and shred
  • return shredded chicken to slow cooker along with bok choy, stir to combine, cover and cook on high
  • once bok choy has wilted (5 minutes or so) your dish is ready to serve
  • serve on a bed of white, sticky rice with sliced green onion and sesame seeds sprinkled on top.
