Cabbage & Ground Beef Slow Cooker Recipe

Slow cooker ground beef and cabbage is a delicious and super easy meal the whole family will love. This keto-friendly dish is the perfect toss-and-go weeknight meal

Ingredients

  • 1 - 1.5 lbs ground beef cooked and drained of excess fat
  • 1 head cabbage chopped
  • 15 oz can diced tomatoes
  • 1 cup onion diced
  • 1 red pepper diced
  • 15 oz can tomato sauce
  • 8 oz can mushrooms sliced and drained
  • 1 tablespoon Italian seasoning
  • 1 tablespoon garlic minced
  • 1.5 cups shredded cheddar or mozzarella cheese divided
  • salt and pepper to taste
  • non-stick cooking spray

Instructions

  • brown ground beef
    1 - 1.5 lbs ground beef
  • dice onion, red pepper, and head of cabbage
    1 head cabbage, 1 cup onion, 1 red pepper
  • spray slow cooker with non-stick cooking spray
    non-stick cooking spray
  • Add all ingredients except cheese to slow cooker. Stir to combine a bit, if you can. Your slow cooker will be very full but will shrink as it cooks
    1 - 1.5 lbs ground beef, 1 head cabbage, 15 oz can diced tomatoes, 1 cup onion, 15 oz can tomato sauce, 8 oz can mushrooms, 1 tablespoon Italian seasoning, 1 tablespoon garlic, 1 red pepper
  • Cover and cook on low for 8 or so hours (or 4 hours on high)
  • 15 minutes before serving, add 1 cup (or more!) of shredded cheese to the contents in a slow cooker. Stir and cover to allow cheese to melt
    1.5 cups shredded cheddar or mozzarella cheese
  • Just prior to serving, top with remaining cheese.

Notes

Add salt and pepper to taste to each serving.  
We have made this recipe with both mozzarella and cheddar cheeses.  A sharp cheddar is my personal preference.  Mozzarella add more of a cheese "stretch" to it, but sharp cheddar adds more flavor.
